Apple Cobbler for Two

As a single person I am always on the lookout for recipes that serve only one or two people. While I don't mind leftovers, making enough for 8 people means I have 8 meals of the same thing...so the smaller the recipe the better. Since the advent of my life changes I have been looking for easy, good and relatively healthy ones, which is even harder! So, I found a good one that is not all that healthy, but not too horrible I guess. Great Sunday afternoon treat with little prep and lots of flavor.

Apple Cobbler for Two:

One large apple (I like to use granny smith but gala are also pretty good too)
1/2 cup of butter
1 cup of white or brown sugar (or half and half)
1 tsp. cinnamon

Peel, core and slice apple. Place in oven safe dish, add butter, sugar and cinnamon. bake for 1 hour on 350 (works great in a toaster over, since it is such a small portion, less energy!). After the hour put 1/4 to 1/2 a cup of heart healthy reduced fat Bisquick mix (depending on if you like lots of cobbler or just a little, you can adjust butter as well, I used 1/4 for both) into baking dish and mix. Bake for 10 more minutes.

Serve warm with ice cream or by its self! Two servings.

I enjoyed this this afternoon after an amazing dinner of coconut-lemon chicken and rice dish with lots of veggies and some cashews...yum! Super easy recipe, all in a rice cooker!
