Banana Bread

I tried a new recipe for banana bread yesterday. For the most part, I like it. There are a few tweaks I will make next time, but all in all, It was good.

I wanted a recipe that would be easy, yummy, and decently good for us. It used whole wheat flour, honey and applesauce, eggs and bananas. Easy and good for me if you used the right applesauce.

I found it needed more banana for my liking and I added some cinnamon and will add more next time. It is slightly dense but has a good texture and flavor. Here is the recipe:

3 overripe bananas (I felt like it needed more but it was good with only the 3)
1/2 cup unsweetened applesauce
3/4 honey
2 eggs beaten
1 tsp baking soda
2 cups whole wheat flour
1 tsp cinnamon (I think I'll add and extra 1/2 more next time)
1/2 tsp salt

Mix wet ingredients then slowly add the wheat flour.

Preheat oven to 350, cook in greased loaf pan for 60 minutes.

My oven cooks a little faster so I think about 50-55 minutes worked for me.

Today I will attempt an apple or pear bread. I'm in a Baking mood. Enjoy this recipe!
